Sweet Potato & Lentil Stew
A bowl of this stew is like wrapping yourself in a soft blanket — comforting, grounding, and deeply nourishing. Every ingredient was chosen with care, to not only satisfy your taste buds but also to bring balance to your body and nervous system.
INGREDIENTS:
2 CUPS OF CHOPPED SWEET POTATOES
2/3 CUP OF GREEN LENTILS
1 YELLOW ONION
3 GARLIC CLOVES
4 CUPS OF VEGGIE/BONE BROTH
1 TSP OF TURMERIC
1 TSP OF CORRIANDER POWDER
1 TSP OF CUMIN
1 TBSP OF FRESH GINGER
1/2 TSP OF CHILLI FLAKES
1TBSP OF COCNUT OIL
SEA SALT & BLACK PEPPER
The Recipe:
Melt a spoonful of coconut oil in a large pot. Add finely chopped onion and let it soften for about 5 minutes until translucent. Stir in minced garlic and fresh ginger for another 2 minutes, then gently sprinkle turmeric, coriander, cumin, and a pinch of chili flakes.
After a minute, add diced sweet potatoes, green lentils and broth. Bring to boil, then lower the heat and let it simmer for 25–30 minutes, until the lentils soften and the stew becomes rich.
Finally, fold in a handful of spinach and creamy coconut milk. Season with sea salt and cracked pepper, and allow it all to come together for another 3 minutes.
Serve warm with jasmine or brown rice, topped with fresh avocado slices, chopped cilantro and a squeeze of lemon or lime juice.
