Spiced Millet Porridge

My happy place in a bowl. During the colder months, I always find myself craving something warm, grounding, and gently sweet to start the day. Millet porridge has become my winter ritual — creamy, spiced, and deeply nourishing for both body and mind.

Millet is rich in magnesium and B vitamins, both of which help calm the nervous system and support steady energy throughout the day. Paired with warming spices like cardamom, cinnamon, and cloves, this bowl feels like a hug from the inside out.

Ingredients (2 servings):

  • 1 cup dry millet (soothing, magnesium-rich grain)

  • 1 cup water

  • 1 ½ cups almond or oat milk

  • 1 medium apple, chopped

  • 3 cardamom pods or ½ tsp ground cardamom

  • 4 whole cloves or ½ tsp crushed cloves

  • 1 cinnamon stick or 1 tsp ground cinnamon

  • ⅓ tsp nutmeg

  • 2 tbsp or raw honey, chopped date or maple syrup (natural sweetness)

  • Your favorite toppings (nuts, seeds, fruit, nut butter)

How to Make It

  1. Rinse millet thoroughly and soak overnight (this makes it softer and easier to digest).

  2. In the morning, rinse again and place in a pot with water, milk, apple, your choice of sweetener and spices.

  3. Simmer gently for about 15 minutes, stirring often, until creamy and the millet is tender.

  4. Remove whole spices before serving.

  5. Top with your favorite additions — more maple syrup or honey, toasted nuts, nut butter, pomegranate seeds, or hemp hearts.

A bowl of quiet comfort, perfect for slow mornings.
